White tea is tea made from new growth buds and young leaves of the plant Camellia sinensis. The leaves are steamed or fired to inactivate oxidation, and then dried. White tea therefore retains the high concentrations of catechins (antioxidants) which are present in fresh tea leaves. As white teas contain buds and leaves, whereas other teas are mainly leaves, the dried tea doesn’t look green and has a pale appearance.
White tea is very similar to Green tea in that there is very little or no fermentation of the buds however white tea does not have the "grassy" taste to it that green tea does making for a lovely, light and sweet cup. White tea also contains the smallest amount of caffeine compared to other more traditional teas and has even been shown to contain more antioxidants that even green tea.
White tea is a specialty of the Fujian province in China. The leaves come from a number of varieties of tea cultivars. The most popular are Da Bai (Large White), Xiao Bai (Small White), Narcissus and Chaicha bushes. According to the different standards of picking and selecting, white teas can be classified into a number of grades and styles.

Directions
Use 1 heaping soup spoons per 6 oz. cup; heat fresh water until it is steaming briskly (not boiling); let steep for 3-4 min. All teas we sell have brewing instructions on the bag.
